Vanilla Shortbread Cookies

Whenever someone I haven’t seen in a while asks me what I’ve been up to I never know what to say.

Most times I go with, Oh you know, not much. Just the same ol’ thing.

And it’d be totally wrong to say stuff like:

Someone is letting me use their certified kitchen for super cheap and I’ll be able to start selling my baked goods.

A publisher emailed me and wants me to co-author a cookbook.

Oh, I’ve actually been offered a job to work in Paris (or London) for a year and I’m going to accept it.

Yeah. Lying is probably not a good idea.

Vanilla Shortbread Cookies

Yield: 24-30 cookies


  • 2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup powdered (confectioners) sugar
  • 2 teaspoons vanilla bean paste (can substitute with pure vanilla extract)
  • ½ teaspoon sea salt


  1. Preheat oven to 350?F.
  2. In a large bowl add flour, butter, sugar, vanilla, and salt. Stir until combined.
  3. Using a 1-inch cookie scoop, place dough onto parchment lined baking sheets.
  4. Bake for 10-12 minutes, rotating 180? at least once.
  5. Let cookies cool on pan for a few minutes before transferring to a wire rack.

  1. I fell for the whole, “Someone is letting me use their certified kitchen for super cheap and I’ll be able to start selling my baked goods.” LOL! But nah, I can see that happening to you. In fact I saw a paper good pastry bag photo online (you know the ones you’d get from Starbucks) that said, “Made with Love from My Kitchen.” I thought of you when I saw that.

    I’m the same way, I never know what to say when I see people I haven’t seen in a while. But at the same time it’s like, where do you even start? (depending how long you haven’t seen them.)

    These cookies look really good! I’ve never had vanilla shortbread cookies but I really like vanilla. mmm!

  2. Mmmm! What was the texture like? Soft, cakey and crumbly?
    And I don’t understand why people feel the need to know what you’re up to and then they look down on you for being up to nothing even though you are happy doing nothing. They just don’t understand that life is just a race with ourselves and no one else. #doingnothingrant
