Blueberry Swirl Blondies

I had not one but TWO songs stuck in my head when I was trying to fall asleep last night.

That’s right.

I had both Kanye West’s Gold Digger and Britney Spears’ Oops! I Did it Again stuck in my head. It was a slightly weird but kinda cool mash up.

Just like these blondies.

They make look a little odd but are right on point in taste.

Blueberry Swirl Blondies

Yield: 16 Blondies


  • Blondie Batter
  • ½ cup (1 stick) unsalted butter, melted (can substitute coconut oil)
  • ¾ cup brown sugar
  • 1 egg
  • 2 teaspoons pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • Blueberry Cream Cheese Topping
  • 4 oz. cream cheese, room temperature
  • 1 ½ tablespoons granulated sugar
  • ½ teaspoon pure vanilla extract
  • 2 tablespoons blueberry sauce or jam


  1. Preheat oven to 350°F.
  2. Blondie Batter:
  3. In a large bowl, combine butter and sugar and whisk thoroughly. Add egg and vanilla, whisking to combine.
  4. Add flour and salt. Mix until just combined. Be sure to not overmix.
  5. Blueberry Cream Cheese Topping:
  6. In a medium bowl, whisk together cream cheese, sugar, vanilla, and blueberry sauce. Set aside.
  7. Assembly:
  8. Pour blondie batter into parchment lined 8x8 baking pan. Dollop blueberry cream cheese topping over the batter. Swirl batter using a toothpick or butter knife.
  9. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  10. Let cool on wire rack.
