Cereal + Milk Cupcakes

I was supposed to create a Doctor Who related recipe last week that I could share with you today.

Then life happened.

Meaning I forgot about it and was too lazy to make anything when I finally did remember.

So instead of fish fingers and custard or jammie dodgers, I’ve got cereal and milk cupcakes.

The Cap’n.

Not quite the Doctor but he’ll do.

Cereal + Milk Cupcakes

Yield: 12 cupcakes


  • For cupcakes
  • 1 cup (plus a little extra if you want to top the frosting) Cap’n Crunch Cereal
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup (1 stick) unsalted butter, room temperature
  • ¼ cup vegetable shortening
  • 3 eggs
  • ½ teaspoon pure vanilla extract
  • ½ cup milk
  • 3 oz. evaporated milk
  • 3 oz. sweetened condensed milk
  • For Frosting
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3 ½ - 4 cups powdered sugar
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon milk


  1. Preheat oven to 350 degrees F.
  2. Pour cereal in food processor. Blitz until cereal looks like crumbs.
  3. In a medium bowl whisk together flour, cereal crumbs, baking powder, and salt. Set aside.
  4. In a large bowl beat together sugar, butter, and shortening until thoroughly combined. Add eggs and vanilla extract and stir to combine.
  5. Alternately add flour mixture and milk to the butter mixture, starting and ending with the flour. Stir to combine.
  6. Line a muffin tin and fill 2/3 of the way with batter. Bake for 18-22 minutes or until a toothpick inserted into the middle of a cupcake comes out clean.
  7. Let cupcakes cool.
  8. Place 12 cupcake liners on a foil lined baking sheet. Set aside.
  9. Using a toothpick or skewer, poke holes in the tops of the cupcakes.
  10. In a medium bowl, whisk together evaporated milk and sweetened condensed milk. Pour mixture over the tops of the cakes.
  11. Place cupcakes into liners on baking sheet.
  12. Refrigerate for 1-2 hours.
  13. Frosting:
  14. With a hand or stand mixer, cream butter for 1-2 minutes.
  15. Add powdered sugar a little at a time while mixing with a hand mixer. Once all sugar is incorporated, beat for 1-2 minutes more.
  16. Add vanilla and milk. Beat for another minute.
  17. Assembly:
  18. Frost cupcakes.
  19. If desired, top with Cap’n Crunch Cereal.
