Brownie Cookie + Mint Chocolate Ice Cream Sandwiches

This was my brain last night:

I have a dentist appointment on Friday. I better remember to floss really well.

Oh, and after the dentist I need to return my library books.

It went on and on like that for a few hours. I didn’t fall asleep till after 3am. Which totally sucked because now I’m super tired. I like sleep. Sleep is good. You know what else is good? These ice cream sandwiches. Chocolate and refreshing mint? Hells yes.

Hopefully the next time my brain doesn’t want me to sleep it chooses a Sara Bareilles song to sing.

Brownie Cookie + Mint Chocolate Ice Cream Sandwiches

Yield: 8 ice cream sandwiches

Ingredients

  • Brownie Cookies
  • ¾ cup granulated sugar
  • 2/3 cup brown sugar
  • 1 cup all-purpose flour
  • ½ cup dark chocolate cocoa powder (I used Hershey’s Special Dark)
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 eggs, lightly beaten
  • 6 tablespoons unsalted butter, melted
  • ¾ teaspoon pure vanilla extract
  • Ice Cream
  • 1 ½ - 2 cups mint chocolate or mint cookie ice cream

Instructions

    For cookies:
  1. To a large bowl add granulated sugar, brown sugar, flour, cocoa powder, baking powder, and salt. Whisk to combine.
  2. In a medium bowl whisk together the eggs, butter, and vanilla.
  3. Add wet ingredients to dry ingredients and stir to combine. DO NOT OVERMIX. Refrigerate dough 1-2 hours.
  4. Preheat oven to 350 degrees F.
  5. Remove dough from refrigerator. Using a 1-inch (diameter) cookie scoop, place dough onto parchment lined baking sheets, about 1 ½ inches apart.
  6. Bake for 10-11 minutes. Cool on pan for one minute. Remove cookies from pan and cool completely on a wire rack.
  7. For assembly:
  8. Scoop 1 ½-2 tablespoons of ice cream onto the flat side of one cookie. Top with another cookie and lightly press together. Repeat with remaining cookies and ice cream.
  9. Place sandwiches in the freezer for about 1-2 hours or until firm.
