Banana Cupcakes with Peanut Butter Frosting and Bacon Sprinkles

It’s just been one of those days.

One of those days that make me completely question my parenting abilities.

One of those days where I feel like I’m going to completely crumble.

One of those days that I wish I were stronger.

One of those days where it’s evident that I’m not as patient as I’d like to think I am.

One of those days that make me wonder if I’m not cut out to be a mom.

Crossing my fingers that tomorrow is better.

Banana Cupcakes with Peanut Butter Frosting and Bacon Sprinkles

Yield: 12 cupcakes

Ingredients

  • For Cupcakes
  • ½ cup (1 stick) unsalted butter, room temperature
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • ¾ cup mashed bananas
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon (optional)
  • 4-6 slices bacon, fried and crumbled
  • For Frosting
  • ½ cup (1 stick) unsalted butter, room temperature
  • ½ cup peanut butter
  • 1 ¼ cups powdered sugar
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon milk

Instructions

    For Cupcakes:
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, using a hand mixer, cream butter and sugars together for about 2 minutes. Add mashed bananas and mix for a minute more.
  3. Add eggs and vanilla and beat until combined.
  4. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. Slowly add dry ingredients to wet ingredients. Mix until combined.
  5. Pour into lined cupcake tins and fill about ? of the way full. Bake for 18-22 minutes or until a
  6. toothpick comes out clean.
  7. Cool cupcakes completely before frosting.
  8. For Frosting:
  9. Cream butter and peanut butter for 1-2 minutes.
  10. Add powdered sugar a little at a time while mixing with a hand mixer. Once all sugar is
  11. incorporated, beat for 1-2 minutes more.
  12. Add vanilla and milk. Beat for another minute.
  13. For Assembly:
  14. Frost cupcakes and top with bacon.
