Mini Curry Hand Pies

So something kind of awesome happened yesterday.

And I’m not talking about the election of the new Pope.*

A Kickstarter for a Veronica Mars movie got completely funded in less than 12 hours.

The goal was $2 million.

How crazy yet amazing is that?

Since I’m a fan of the show, I thought that was pretty cool.

But there are a lot of people who are totally against this non-traditional way of funding a movie.

To those people, well, here’s what Amanda Palmer (whose TED Talk about The Art of Asking is phenomenal) had to say:

I absolutely agree with her.

Mini Curry Hand Pies

Yield: 8-12 mini hand pies

  • 2 unbaked pie crusts (homemade or store-bought)
  • ½ cup leftover curry
  • ½ cup grated cheddar cheese (optional)

  1. On a lightly floured surface, gently roll out pie crusts to just slightly bigger than they were packaged. Using a cookie or biscuit cutter, cut dough into 3-inch rounds.
  2. Place 1- 1 ½ teaspoons of curry onto a dough round. Sprinkle curry with cheese. Fold dough over the filling and crimp the edges together, using the tines of a fork. Repeat with remaining dough and filling.
  3. Place mini hand pies onto a parchment lined baking sheet and put in the refrigerator for about 20 minutes.
  4. While pies are in the refrigerator, preheat oven to 425?F.
  5. Remove pies from refrigerator. Brush milk over pies and poke a few holes in the tops of the pies.
  6. Bake for 18-20 minutes. Enjoy!

* I know electing a new Pope is a pretty serious thing, but all I could think of was a scene from Friends.
Chandler: Take off their hats!
Phoebe: Popes into a Volkswagen! I love that joke!
