Guinness® Bacon Brownies

I work out.

Yup.

The girl who bakes at least once a week and makes ice cream every other week works out.

Sometimes I even use weights.

For a while now I’ve been trying to work out at least five days a week, for about 30 minutes each time. I know some of you may think half an hour sessions aren’t anything, but I’m usually sweating like a sinner in church afterwards.

So, what kind of stuff do I do during my workouts?

Well, lately it’s been mostly cardio stuff like zumba (which includes some ab & toning routines) and dance fitness. Thanks Youtube! These kinds of dance workouts are a lot of fun.

All that dancing helps to lessen the guilt when I make stuff like this.

Guinness® Bacon Brownies.

I know it sounds strange, but trust me, they’re reeeeeally good.

They’re hide-in-the-kitchen-so-you-don’t-have-to-share-with-your-kids good.

Super fudgy and chocolaty. Shouldn’t all brownies be like that?

Yes. Yes they should.

Guinness® Bacon Brownies

Yield: 24 brownies

Ingredients

  • 1 ½ cups granulated sugar
  • 2/3 cup brown sugar
  • ½ teaspoon salt
  • ¾ cup cocoa powder
  • ½ cup dark chocolate cocoa powder (I used Hershey’s Special Dark)
  • ¾ cup all-purpose flour
  • 3 eggs, lightly beaten
  • 1 teaspoon pure vanilla extract
  • ¾ cup butter (1 ½ sticks), melted
  • 1 cup Guinness® stout
  • 6-8 slices bacon, baked or fried and roughly chopped
  • 1 cup bittersweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Spray a 13×9 inch pan with nonstick cooking spray or line with parchment paper.
  3. In a large bowl, combine sugars, salt, cocoa powder, and flour with a whisk.
  4. In a medium bowl, whisk together eggs, vanilla, butter, and Guinness®.
  5. Add wet ingredients to dry ingredients and gently mix. Be sure to not over mix.
  6. Fold in bacon and chocolate chips.
  7. Pour batter into the pan and bake for 30-35 minutes or until a toothpick comes out with only a few crumbs attached.
